Most delicious Summer desert Coconut Sorbet

I love the Summer! But let’s be fair! Who doesn’t? Good weather, holidays, beach, short clothes and … You know…Diet!!! So lets give coconut a shot.

A lot of talk is surrounding these days the benefits of coconut, people are consuming more and more coconut in several ways, milk coconut, oil coconut, coconut water, raw coconut. This fruit became so famous that there benefits became really confusing! And people start question. Its healthy or just marketing.

Lets put it clear! There are no magic fruits that will put you skinny just because you eat it all day (in fact this will just make you ill) or protect you against any disease. The secret is know deep what are there benefits and together with other foods have a healthy and balanced diet. Is never late to remember about the food pyramid that suffered some changes since we were at school.

So what are the benefits of eating coconuts ingredients (together with a balanced diet).

The coconut  water is full of electrolytes, you know this are those guys that keep your body hydrated. This is the best for a post workout (better than those sugar energy drinks) drink you can have it because it will hydrate your body giving the muscles and nerves the water they need (can work on hangovers :p).

The oil is where the confusion starts! The coconut oil is full of fat,and that we know, but there are two kinds, the hydrogenated and extra-virgin coconut oil, you want to stay away from the first one. Although the coconut oil is a saturated fat it has a 50% of lauric acid that our body converts into a monolaurin which has anti-viral, anti-bacterial, and anti-protozoa properties.

The coconut derivates also can improve your secretion of insulin, improves your digestion, improves good cholesterol (HDL), restore and supports thyroid function and help your skin and hair look healthier.

This recipe is Vegan and Dairy Free

Time: 1 day

What you will need?

  • 250g Coconut milk
  • 15 g Dissecated  coconut
  • 50 g Sugar
  • Water
  • 1 teaspoon Cornflour
  • 15 g Sugar

How to do it?

1.Place the water and 50g of  sugar on the heat untill 54ºC.

2.Solve the Cornflour and the 15g sugar apart with a little bit of  hot water. And then pour on to the hot water.

3.Boil for 30 seconds and live to cold down at the fridge for four hours.

4.Mix the coconut milk and dissecated coconut and keep it in the freezer.

5.From time to time stir the misture.
